TMSL are committed to "delivering staffing excellence", having a stringent training and assessment process to which all new staff are obliged to complete and pass prior to joining the TMSL team. This training and assessment is based on the NVQ awards and consists of modular training sessions culminating in an on the job assessment with selected key clients. Back of House Services. Signature, Executive, Head and Commis Chefs. Porters, distribution, wash-up and kitchen assistants are all available at short notice. The back of house staff are probably the most underrated in the industry and yet they are the most vital to ensure that the job is done. All TMSL's back of house teams are trained in all aspects of their duties. These include stills room, pot and plate wash, back of house set up and operation At TMSL the catering team understand and value the importance of the fast and efficient set up and break down.
